you can blend (with a blender) together some onion and celery and make a kind of liquid/paste...then mix it into the tuna with your little bit of mayo....that helps!

How about trying some salad dressing with your tuna? :P

To keep my canned tuna moist, I don't drain out all the water (I used to drain it until there was no liquid left) and I mix my tuna (+ onion, celery, dill) with a salad that includes tomato and vinagrette. Then I cut the whole thing up, mixing it all together. It's really delicious and moist. After twice having dry tuna, it was a delight. The vinagrette helps the tuna taste like it has the sweet pickles I always used to add.

This weekend my hubby bought tuna steaks! YUMMY!!!! I seared them in a hot pan, sliced thin and -viola- sahimi at home! It's so tender that it just melts in your mouth!!! Oh, it's sooooo good.
