Hi Everyone
So day two is going well. I am trying to think of things to eat along the way so I don't get bored. So I thought I would ask you all what your eating for lunch and/or dinner today.
Lunch today was yummy
I made chicken salad with chicken, some apple, mayo and a littlte pepper. I had that on my crackers and then a salad with the lettuce an cucumber and my left over apple. I made the dressing with vinegar, stevia and a little salt and pepper. It was really good.

Hi Rachel,
Even though I am done with Refeed I am eating 1PD meals after my vacation last week. For lunch I made tuna mixed w/mayo allowance, bell pepper, onion, and spinach and added a little apple cider vinegar for moisture and flavor. YUM!!
For dinner I'll be having Filet Mignon seasoned with Rosemary, Black Pepper, and Salt and will steam asparagus and mushrooms for the side. I salt and pepper the veggies as soon as they come out of the steamer so the seasonings will stick as I don't use any butter or oil on the veggies. Also Yum Yum!!
I hope you have checked out the recipe sections on this forum. There are many, many good ideas.

Filet Mignon sounds yummy.
For lunch I had sauted(sp?) zuchinni and crook neck squash on top of cottage cheese. It was very good.
Dinner-Chicken w/ curry & garlic powder grilled on a George Forman with steamed asparagus. I do the same as Bronwyn and season them as soon as they are done.

Wow, thanks for the lunch and dinner ideas...I've been on the diet 5 days and I'm not very creative with the meat and vegetables. Please keep the suggestions coming... it really helps! Kathy:)

I am trying very hard to keep changing things. My new thing is grilled chicken over salad with apple and a vinagear and stevia dressing. It is yummy.
Although the chicken salad was good.
I think my fav so far was cottage cheese on my crackers with kiwi. It looked so pretty almost like a pastry.

MMMMMmmmm I agree, the Kiwi cakes are simply :P
Just remember to eat your veggies first so that you still have a balanced meal in one go {wave} – but hey, what a pleasure!!! With food like that, who could believe they are actually on diet??? {wave}

Yummy. I just had curry chicken lettuce wraps for dinner and they were really good.
What is everyone else eating ??

Ok, I won't go over my entire meal plan because I'm sure that some may think it sounds boring.. But I have discovered a great way to cook Cauliflower!.. How exciting right?? lol.. Who'd have thought I'd look forward to eating Cauliflower?? ...
First I will say that I don't prefer it boiled or steamed. ... & Raw is good but its soo much better with my Curry dip that it’s hard to accept without it.. lol..
Anyway, what I've been doing is weighing out my allowed serving and then running in through the food processer so that it comes out looking similar to Tapioca. I heat a frying pan until hot, then spray the bottom with non stick spray, pour in the Cauliflower, and give a light blast of the non stick spray on the top of the Cauliflower. I pan then fry it, stirring occasionally until it is toasted well. (Browned nicely) After toasting the Cauliflower I sprinkle just a pinch of sea salt on top... It is sooo good, and it’s good for us!! Anyway, I hope this will add to your 1PD recipe boxes!!

Wow that does sound good and a good idea. I have been making mashed Califlower. It's kind of like mashed taters. All you do is steam it till its super soft, and then I go over it with a blender.

I think she meant she use to eat it with Curry Dip, and now she can;t and dealing well with it. :)

I read something you wrote in someone elses thread about wondering if the Cohen's diet has you too low for your goal weight, I thought I would come over :plane:to your thread to respond. I know what you mean, I can never remember being the weight they suggest, it seems too light and also to difficult to attain and maintain, when you have never been there its so hard to imagine if not impossible, its like a journey into uncharted waters. I have no answers as I cannot answer my own question on this matter. But thought I would just let you know, I know what you mean.

LOL... Oh Sasha.. My curry dip is to die for (one of my ringer recipes) but it is also one of those that you should just go ahead and rub on your thighs!! ..lol .. Rachel was right.... I wouldn't dream of eating it now, but I've gotten quite creative with my toasted cauliflower. (so much easier to eat than raw and plain, or plain and steamed)
This morning I had 40g of my toasted Cauliflower w/ 40g Heirloom tomato diced, on top of my serving of Cottage Cheese and a bit of diced jalapeno!! ... oh man it was good!...
I've also used the Heirloom tomato (the only tomato on the market with flavor) and toasted Cauliflower mixture in a one egg omlet.. I mixed a bit of diced garlic w/ my egg and used toasted Cauliflower, tomato, and Jalapeno for the filling... I 'll actually fix these both for my family because they were sooo good. Lots of flavor!!

HI ALL THE DIET BUDDIES when I ask the consultant about my GOAL weight being LOW they said the Goal weights are taken of a standard list used world wide and its the recommended GOAl weight and I assume as YOU get closer to the weight you are suopose to be YOU can work out if you look to thin or you feel to thin etc and you then tell your consultant that you have reached your GOAl weight like Shawn the other day thought he was getting to thin!!!I have another theory and that is I work with % FAT ratio because that way I will know what my correct weight will be I have a scale that reads this and apparently a good fat % ratio is 18 to 20% for NORMAL!!Now I know there is some confusion with some people saying this % fat ratio on the scale does not work BUT it does not change much as you lose weight because to your body weight YOU have the same % fat but when YOU get closer to UR GOAL weight its starts kicking in because you are running out of fat at last!!!So for me the FAT % is the thing that will tell me when I am FAT enough as the Body does need some fat to RUN and PAD important ORGANS etc!!Hope that helps and is not to CONFUSING!!!Ha Ha!!Have a SUPE DAY!!!:innocent3:

Could you post your receipe for the toasted cauliflower and the tomato/cauliflower/cottage cheese meal in the receipe section. I see all these posting with great ideas that people come up with and then can never find them again and so want to try this mix. Thanks

I am eating the best dinner I've had in a while. It is someone's recipe for meatloaf. Not sure who or where I got it, sorry.
Meat w/ tomatoes, Onion, curry powder, oregano, s&p.
Then spaghetti squash sauteed up with garlic and pepper. My mouth is happy. :party1::party1::party1::party1:

I just had that tonight, too! Actually, the last time I made it, I made 4 loaves and then I had 3 more easy meals.
It's the best!!

I have another meal to add that I really like. For lunch (the night before) I take portabella mushrooms, and fry them in pan with olive oil. Just enough to brown them. Then at work I take my cheese serving and place it on top of the portabella and microwave until cheese melts. Very very yummy.
