View Full Version : Zucchini Hashbrowns???

Hi....this is my first posting.....AND my first day on 1PD!! It's not bad so far but I need to go to the grocery store and stock up on the essentials.
I keep reading about how good the zucchini hashbrowns are and that there are recipes to view.....but I cannot locate these recipes. Can someone tell me how to navigate to them so I can purchase the necessary ingredients??? Please.....

Today is my first day also and I had the hashbrowns for breakfast and they were great. This is what I did.


Zucchini (allowance minus 15 grams)
15g Onion (rest of allowance)
1 egg
2x Cracker bread
Salt, pepper + herbs to taste

Method:
Grate Zucchini and thinly slice onion. Beat egg and add to vegetable mix. Crush cracker breads and add to mix with herbs. Pour into fry pan in small sections and cook both sides.

I have tried making these hashbrowns a couple times. Each time they just weren't great. I love zucchinis and eggs so figured they would be good.
What is the secret?

Hi Happy,

I don't actually like the combo of the egg and zucchini either. I prefer to make a fried egg and seperately spray the pan with PAM and add my grated zucchini all spread out so each little piece gets a little crispy. You might try this method and see how you like it.

Thanks Surfergirl, I will try that with frying the grated zuch seperate. I love cooked zuchinni. I've just been frying up the veggies, then cooking my egg and adding the veggies on top. It's been good enough. Breakfast is hard to eat for me anyways. I eat it. It's just way too early for food.

Hi All....
I did find the recipe section yesterday afternoon and downloaded a bunch of them to my computer. then I printed them out and made up a recipe book!! I had the zucchini hashbrowns this morning and I really like them. Perhaps a more descriptive title for them should be "zucchini pancakes" cuz I think they resemble potato pancakes more than hashbrowns....but I like them. I was planning on making numerous batches and freeze them. Then when I'm in more of a hurry at breakfast time I can just pop them into the microwave.....I'll let you know how that works.
I did well on my 2nd day of 1PD!! :party1:
I'm very thankful that we're allowed those saltine crackers! They come in handy as between meal snacks!

I've never been big on veggies at breakfast, but I do like the zucchini hashbrowns. I have found that the secret to making them better, for me at least, is to cook them on both sides until they are crispy brown. If you don't cook them long enough, they tend to be a little soggy to me.

Happytmo: it’s hard to say what the secret is, maybe it would be easier if you told us what seems to be the problem? Maybe taste? Try adding some salt and pepper and herbs… If you find yours are too soggy – try adding crackers and cooking a bit longer… and yes, like GettinSkinny says, you must cook them on both sides until golden brown… try making a couple of smaller ones instead of less large ones...{cheerleader}

PhyllisRis: I’m not sure how they will freeze and so ask that you please do let us know.

I know that they do stay good a few days in the fridge! Also the Zucchini Hash Browns are great for traveling – easy ready made meals right there. Great idea for lunch boxes (in this case you swop your meals around) {wave}

These were very yummy!! Thanks to whomever came up with the recipe in the first place - great idea. :)

I like them cooked separate - the egg and zucchinin/onion, and then cooked a little longer together. I eat the crackers on the side.

I would like to thank everyone who posts those "yummy" recipes. They definately make the diet go a little bit easier because you can be creative... I have a hard time because I am not a huge fan of the veggies we are restricted to but am making it work. I love the yogurt smoothies in the a.m., very filling!

Hi....I finally got around to freezing a batch of zucchini hashbrowns (I prefer to call them zucchini pancakes). I reheated the frozen pancakes on a plate in the microwave. I set it for 1-1.5 minutes on High. They turned out quite well! I plan to do this more often. I work for a public school as a support person (computers) and I have several weeks off during the summer. Starting this diet while I've been home all day has been good! I have to go back to school in a week and a half so freezing the zucchini pancakes will speed up my routine in the mornings.
I love this forum...I've learned a LOT from reading your postings!! Thank you all!

I finally tried them today, and mine turned out more like a zucchini scramble. It was good, but not really like a hashbrown. Honestly, I'm afraid to grate the zucchini after I wiegh, because I will lose so much in the grater. Same with the idea of blending food for soup. If we weigh and then lose a bunch to the sides of the grater/blender/pan, are we still getting the correct amount of "medicine". Any suggestions on this dilema? Or am I being too careful?

I make them all the time and I weigh after I grate not before because you do lose so much in th grater. When I first started making them they came out like scramble also I was using saltines at the time. I changed crackers to wasa crackbread and they come out like pancakes now which I enjoy much more. I also add onions or scallions. Very good.

Hey ladies... I will try and describe how I make my zucchini hashbrowns or pancakes and hopefully that will help. I have a scale with a tare feature, so the first thing I do is set a bowl on the scale and tare it to zero. I then use a knife to thin cut my 15 grams of onions directly into the bowl. Next, I use a small hand grater to grate my zucchini directly into the bowl until I reach my allowance. I have found that if I stop grating about 4 grams before my allowance, by the time I scrape the extra off of the grater into the bowl, I am at my allowance. This doesn't work 100% of the time, but if it doesn't I just add or take a way a small dab to make it right. Next, I crack my egg into the bowl, add some salt and stir briskly with a spoon. I then crumble my crackers by hand into that mix and stir until the crackers are coated. I then spray and heat up a medium non-stick skillet. I spoon the mixture into the skillet, forming three piles, which I pat down to resemble small pancakes. I allow them to cook until they are crispy brown on the bottom, then flip each one. I cook them until crisy brown on the other side and wallah -- crispy, zucchini hash browns or pancakes -- whatever you wish to call them. They are delish!!!!!!!!!!!

Oh my gosh Gettinskinny!!! The way you make it sounds soooo delish!!! I went to the store this weekend and they were out of Zucchini! I am going to a different store tomorrow and am going to me it! I am dying to try it! I have been eating a scrambled egg with bell pepper and onion for a week!!! Uggg!

Great stuff on the hash browns, I can't wait to try them. I went through my recipe book and could not find the recipe. I wonder why mine is different. Anyways thanks for the great breakfast ideas.

The recipe for zucchini hashbrowns is in this Forum.....on the front page scroll down to Recipes.....that's where you'll find a whole bunch of other recipes!! One of the Cohen-ites posted detailed instructions on how she prepares the zucchini hashbrowns. I love these (although I cut the quantity of onions back to just 10g) and have them for breakfast nearly every morning. I would even serve them at a brunch for "regular" people!!! smile.....

That’s the whole idea – taking healthy foods and making them a part of your every day Lifestyle – especially after the Re-feeding Program... {cheerleader} this will make it much easier to control your weight afterwards...

I discovered something the other day quite by accident. IF you add some cinnamon and a little bit of nutmeg to the Zucchini Pancakes Hashbrowns, they are quite like Zucchini French Toast!!!! (of course, without the maple syrup!!)

Have you tried the muffins. Its kind of what your describing but you put i shredded apple. it makes like 10 mini muffins. SO GOOD!!

I wish I could say this was my brainstorm but I found them on another site and they are AWESOME!!!

2crispbread
half an apple
zuchinni taken from allowance
1 egg
cinnamon
nutmeg if wanted

-grate zuchini and apple
-beat egg and add to mix,crush crispbreads until fine breadcrumbs and add to mix
-mix thoroughly and spoon into a mini muffin tin sprayed with nonfat spray oil
-bake @350 for 15-20mins makes about 10 mini muffins!!!!

I haven't been successful with the zucchini hash browns but I have found a way to make it that is yummy for me.
One egg
I chop up the zucchini (allowance) in a food chopper (I have the ultimate chopper), add it plus 1/2 teaspoon of chopped onion (allowance) and seasonings (garlic salt) to the egg and stir. Then I put it in an egg ring and cook on low. The trick is to spray the pan and the egg ring with Pam and make sure to get the pan hot.

I tried to attached a photo of the egg ring so you see what I mean but got an error message. If you want to see one just do a google search on "egg ring"'

Okay, I haven't tried these delicious pancakes or muffins yet, but I am sure to soon. What is crispbread? Or cracker bread?
Specifics please, I am doing groceries tomorrow.
Also, I regularly freeze grated zucchini for a different recipe (one that I can't have now!). Is this an idea to make them even quicker? Does the water that comes from freezing make the weight alter and does it matter if it is just water?
It would be great to freeze onion and zucc, in allowance in baggie and then just haul them out before you need them and mix with rest of ingredients, rather than warming them up in the mic. for them to get soggy again.

I have these every morning....I really love them! I think the water generated from freezing the zucchini would alter the weight. You could freeze the shredded zuke and then after thawing drain it completely and THEN weigh it. I have made the whole pancakes and frozen them and they reheat pretty well. BUT...I usually shred zucchini and chop up onion and then weigh out 6 glass prep bowls (they have plastic lids) and then store them in the fridge. Then all I have to add is the egg and the crushed saltine crackers (I use 3 saltines per meal) every morning. This seems to work out the best. AND....I usually pour the whole mixture into a hot fying pan and make one large pancake instead of individual smaller ones...it's quicker and easier.
They are YUMMMMMY!

Here's my recipe:
10 g chopped onion
55 g shredded zucchini (or whatever weight you need to get to your total veggie allowance)
1 medium egg
3-4 saltine crackers, crushed up (I put them into a snack sized ziploc bag, zip it shut, and then roll them with a small sized McCormick spice bottle...the one with no shoulders in the bottle...it makes a perfect mini-rolling pin)

Mix the zucchini and onion with the egg. Then add the crushed crackers and mix thoroughly. Preheat teflon coated 8" frying pan that you've lightly sprayed with butter flavored PAM over medium heat. Pour the zucchini mixture into the pan and with a spatula spread it out to fill the bottom of the pan (OR....drop into individually sized pancakes and flatten them slightly with a spatula). Brown and then flip over (like a pancake) and brown the second side.
Enjoy!!
