So [it's been killing me to not cheat and weigh in] - I just weighed in for the 8 week check and since week 4 I've lost another 14 lbs. I can totally feel the difference in my body - and will try to post my inches lost later tonight...
The food is still going pretty well - and my husband is going to be starting which will make it a little more fun. Last night I grilled halibut on a cedar plank on our grill - it was so tender and delicious, I slopped some homemade mango salsa on top and had it with grilled asparagus and some crackers. Definitley one of my favorite meals so far.

Makena, that is so wonderful. So what is your total loss now? Wow, 14 lbs. in your second 4 weeks is great. My loss won't be that much in my second 4 weeks, but so long as I am losing, I am OK with that. :) Good luck on the rest of your journey and definitely, POST THOSE INCHES LOST!!!!

I am excited to try your meal. I have had cedar planks just sitting in my kitchen. I can't believe I hadn't thought of using them. I would love to hear how you made the mango salsa. Could you post it in the recipe section? How long did you grill the fish on the plan?

WOWEEEE Makena! Great job girl! I'm glad to hear that your husband is going to join too and yes - that will make things a lot easier. Good for you! Can't wait to hear about those lost inches.

GettinSkinny-My 8 week loss is 34lbs at this point. I still haven't gotten around to my measurements, but will try to do that sometime this weekend.
Hugentobler-I will post the recipe for the salsa in the recipe section. For the cedar planks I had I grilled about 5-6 120g portions on one cedar plank over medium heat for about 20 minutes (or until just tender). The cedar planks I use have to be soaked for 20 mins prior to use - just something to remember when you're on a timeline...

i used the cedar plank last night....It was good!!!! I can't wait to try it with the salsa

Please post your grilled halibut on a cedar plank in the Fish ideas - it sounds so delicious and it's an excellent idea to make a couple of portions. I'm hungry just from reading your yummy ideas... MMMmmmmm :hungry:
