It gets kind of hard to find the recipes in one long thread so I thought I'd try a new thread for a new recipe. Shasha asked for some ideas and this is something I love to eat! Last night I had it wrapped in a cabbage leaf with cinnamon chicken and today I'm having it for lunch with feta cheese and salad stuff. I also love to mix it with spaghetti squash. I made this for Christmas Eve dinner. We had a Lebanese theme and this fit right in. I served it with crackers and celery.

It's great mixed with feta cheese or on fish, chicken, turkey burgers or beef. I also used it to make a ‘pizza’. Rice cake, mozz cheese, salsa, and celery on the side.

You can use fresh or dried herbs. I didn't use specific measurements as it is best to make according to personal taste like most salsas and I tend to just throw things together. I made a large batch and the amounts are approximate. I also chopped up the main ingredients separately, then tossed them together. Do your own thing (if you like green pepper more than onion, use more green pepper). You can use a food processor or chop by hand. I do both.

Mediterranean Salsa

8 Roma Tomatoes
1 Cucumber
1 Green pepper
1 small Onion
2 clove Garlic
2 - 3 T dried Oregano
1 - 2 T dried Basil
Dried Mint leaves, a pinch or two
Lemon juice
Salt

Chop all ingredients and mix together. Add lemon juice and salt to taste. Refrigerate for at least an hour or so for flavors to mix.

I use 40 – 60 g at a time, then use other veggies to make up my allowance.

I really like this kind of recipe! :clapping: Where you make something and then use it over and over to make different things... so convenient!

The nice thing is that even non dieters will love this!

hi, shasha or any one else smarter than me...:thinking:
the low fat mayo story has not come 2 a happy ending, yet- eventhough i've been dashing out the door the other day, with the mission 2 get one..{motorcycle} (remember?)- in the "hungry"-section.
here in good ol' austria there r no items like fat free 2 get and the low fat stuff is not always compatible with the 1st diet-
low fat mayo is 25%, which most likely wont do the trick & contains starch (not much but it does).
is there a way 2 fix low fat mayo myself-
i only know the regular real fat one 2 prepare.
or is the amount of starch in the product and by taking only 1 teaspoon acceptable?

{oops} I don't have a low fat mayo recipe for you to try, but what I can give you is the ingredients and spec's for the one which I am using - perhaps this can help??

Ingredients:
Water, vinegar, canola oil (7.6%max) with anti oxidant Sugar salt maize starch, spices, citric acid, lemon juice , Thickener (xanthan gum & guar gum), sodium saccharine (non nutritive sweetener), colourants (quinolene yellow & sunset yellow) Preserved with potassium sorbate

Nutritional information:
Nutrient Per 100g
Energy (kj) 460
Protein (g) 0.2
Carbohydrate (g) 11.3
Total fat (g) 7.6
Of which:
Polyunsaturates (g) 2.2
Monounsaturates (g) 4.5
Saturates (g) 0.5

Sodium (mg) 980

wow, thz almost as "bad" as the one i get 2 buy here!
but i guess yours has a little less fat- i'll check next time i go shopping. {motorcycle}
i didnt take any so far, as i thought starch in any kind is not allowed and maybe stick with no mayo, as i came so far without... we'll see how much more bored i get with the allowed food, as i only am in my third week! :thinking:

As my family sat down for spaghetti dinner, it came to me take there had to be a way to make spaghetti sauce out of my veggie allowance. Any ideas on how to make it? I love to make it for my chicken.

Hi there,

I viewed this post 'cause I wanted a recipe for spaghetti sauce too. I've noticed nobody has written back so figured I'd write back to you what I'm going to try. I'm making spaghetti squash tonight so I think I'm going to make a little "sauce" to go on top by using some of my veggie allowance. I understand the spaghetti squash yeilds a lot of veggies so I should be able to use some other veggies without using my whole allowance for the squash. Anyway, I digress... I'm going to mix some tomato, little bit of onion, some garlic, and add maybe some basil and oregano. I'll put those in a pot with a little bit of water and will let it all simmer together. If you allow your whole veggie portion for this I bet it'd be pretty good 'cause you can use more tomatoes. I'll let you know how it turns out.

Hi there,

Sorry I didn't log on yesterday. It turned out VERY yummy. I sauteed the tomatoes, onion, garlic, basil & oregano in a small pan. I did add a little water 'cause I also wanted it to simmer for a while so the flavors would come together. It was delicious. I also thought after that green bell peppers would've also added a nice flavor to the mix. If you use all your veggie allowance for this it'd make more (with the squash it didn't make much, but was perfect addition to the squash). You could also puree the ingredients to make it more like sauce. (I left it chunky). Still, very good italian taste to the dish. Let me know if you try it!

I LOVE your idea and would have recommended exactly the same... defiantly would have recommended the basil and oregano and perhaps ? even some thyme.

I love your idea about the spaghetti squash - this sounds excellent!

A thought I did have that I would like to add: if I were to be in a hurry, I would just throw all the above raw into my blender and then heat to boil and simmer a bit...

WAY TO GO GIRLS - I love it when you mingle! :clapping:

Wow - Thanks Shasha! Coming from you (Recipe Queen!!) that is a huge compliment. I've only just logged onto the board a few days ago, started my diet on 1/21. I'm loving it and am finding it really very easy to follow and maintain. I was so excited to find this site and have really just been browsing so far. Thanks for the positive feedback and I'm glad you liked my idea! Having new recipes to try is going to be key in keeping the food interesting and delicious.

I can't wait to try it!!! I went looking for the spaghetti squash tonight so I could try it this weekend. Sadly, no luck...but I am going to try and make it for my chicken. Thank you both for the suggestion.

Firstly I need to thank my fabo husband for this recipe - he is a qualified chef (yeah - I know how handy is that...), he's doesn't work in that field anymore but loves to cook for family and friends resulting in us getting thoroughly spoilt! So thanks hubby, I'll be posting more of his creations in the future for sure!

This is simply delicious - but please note when you make this, it is for 4 servings. So don't get carried away and eat it all at once! Make it and store it in 4 small separate containers.

INGREDIENTS:
1/2 mango - diced finely (fruit allowance)
1 clove of garlic - crushed
1/2 to 1 tsp of red curry - depending on your tastes
4 tsp of low fat mayo (allowance)
Water
Cooking spray

METHOD:
Spray a medium frying pan with cooking spray.
Cook your garlic and red curry over medium heat until the curry sticks to the pan, (this cooks the curry and removes bitterness from the garlic).
Add 2-3 tbs of water to de-glaze the pan.
Add 1/2 of your diced mango quantity to the pan.
Add a further 1/4 cup of water and simmer for 2-3 minutes reducing the ingredients.
Stir in the 4 tsp of mayo, may want to add a bit more water.
Remove from heat and add the remaining diced mango. So you've used 1/2 of the mango to cook and the other half is fresh.
Allow to cool then remember to divide into 4 amounts and store in very small containers - or old spice bottles.

USE:
Superb with warm chicken salad and fabulous with fish.

COOKS NOTE:
Mango and curry go together like cheese and crackers!

Just remember, if you are having 1/2 mango and 4 tsp of mayo... the may is for 4 days, but you also need to use less fruit on the days you are using this (1/2 a mango divided by 4 days would be about 1/8 fruit less on the days you are eating this...) :love7:

i finally found a store that sells low fat mayo- egg-salad or your version: curried egg- here i come!! i bought 2 different, the one has even only 70 cals, the other 200!! that should b ok. the ingredienz r just like the one u described!!

Thank you for this recipe--it appeared just when I needed something different! It is absolutely awesome on fish and then I used it on chicken salad last night! Once I mastered peeling the mango and slicing it up (thanks to the Food Network), this couldn't have been easier to make.
Thank your husband and PLEASE PLEASE PLEASE give us more!

I'm so glad you enjoyed it! :) I had my portion last night with a chicken vegie stirfry with cubed zuccini, onion, mushroom and asparagus.... it too was yummy!
I'll post any new creations he comes up, but so far the resident recipe writers have covered most bases... that's how talented they all are! Mind you I've had to pull him up a couple of times as he's been over ambitious mixing ingredients. {pan} Like yesterday morning he wanted to make a fruit smoothie using a mix of the fruit allowance and yoghurt. Am I right (Shasha or Wilma?) in that you can't mix your fruit allowance?
To be honest, I've enjoyed more tasty creations on 1PD than before! And having to make the time to get organised and ensure you stick to the program 100% has added a new appreciation on food.

Hi Katra - I've been making a 'honey mustard' type dressing that turns out pretty well -

1 tsp lite mayo
mustard powder - about 1/4 tsp
sweetener, 1-2 packets depending on how sweet you like things
salt
pepper
onion powder - just a sprinkle
water - 1 tsp
I use a few drops of white balsamic vinegar too, but you can leave it out if you like

Mango Salsa
-Diced Mango (from allowance - I don't use the whole allowance for this recipe)
-20g Diced Onion (from Veggie allowance)
-Chopped Cilantro
-Freshly Grated Ginger
-Dash of White Vinegar
-Dash of Lemon Juice (together the lemon juice and mango make up one fruit allowance)

Mix in a bowl and adjust additives as needed for perfect flavor. This salsa is excellent on grilled seafood or chicken. I have it almost once a week.

Hi everyone, i was just wondering what everyone did for their salad dressing? This is my 6th day on the diet and i am get bored of lemon (from allowance) and a pinch of salt... if anyone could help that would be great.

I've been using flavored vinegar on my salads. I usually spritz the salad with a quick spray of olive oil or regular Pam and then spray with the flavored vinegar...raspberry or balsamic or wine. I emptied out a bottle of Wishbone Salad Spritzer that I had kicking around in our refrigerator and then filled it with vinegar...it spritzes out really well onto my salad....and it's easy to pack along when we go out to eat or to parties.
I've also made "dressing" for coleslaw based on a recipe that my Mom used to make. I use 2 Tbsp. of white wine vinegar (you can use cider vinegar, too), 2 Tbsp. of water, 2 Tbsp. of Equal sweetener, about 1/2 tsp. of olive oil and about 1/2 tsp. of celery seed. Mix it all together and then pour over shredded cabbage. You'd be amazed at the amount of cabbage it takes to reach our veggie allotment!! It's a LOT! I put the dressing on the coleslaw and let it sit in the refrigerator for a few hours to marinate, stirring occasionally. It's really good. I know that we're only allowed 1 Tbsp. of vinegar/day....but not all the vinegar will be "absorbed" into the cabbage so as long as you don't drink the left over vinegar you'll be okey dokey!!! :)

My quick go to dressing... mayo, balsamic vinegar, salt, garlic... I put it in a container, shake it up and enjoy.

:cop: you are NOT allowed to have olive oil or celery seed while being on the 1st Personal Diet Program. :cop:

Please do not use seeds of any kind as this will just slow your progress down... and we don’t want that to happen {noway}

oops....I didn't realize (or remember if I read it before) about the seeds thing.....and I thought the olive oil spray was ok for cooking...I know I read that somewhere.

It is in the guide:

"You may use limited quantities of cooking spray or olive oil spray."

But not sure what a limitied quanity is.

I also have PAM Oranigic Olive Oil Cooking Spray, which I haven't used yet.

Sasha... is the above from our guide still true?

Yes...my guide says that, too. And, not wanting to sound whiney or anything, but I re-read my guide and found nothing in it regarding not having seeds. Peppercorns contain a seed for the pepper plant.
But, alas, I won't eat celery seed anymore....sniff, sniff...

I believe that you probably can't use it because it would be part of your veggie portion. Like onion powder would be. And since in that form we can't control how much we intake -- we just aren't allowed to have it. Pepper is an unlimited resource so I don't believe that counts.

I have tried the balsamic with garlic powder and italian herbs little sweetner it is good on shrimp and veggies after they have been cooked along with also putting it on salad for a change too!

Yes -- the "salad dressing" makes a great stir-fry add on. However, try real garlic instead of the powder -- it's amazing how much better the fresh stuff is. The powder often has other chemicals in it (often to help it stay granular so it can flow out of the jar). Real food is so much better than chemicals.

I also learned that you can get "spicey" garlic. My sister's neighbor evidently grew some garlic in her garden and wow, what a kick! It was great!

Any other "free" item

Use a lot of mustard powder mixed with water until it has the same consistency as prepared mustard. This mustard will be very spicy, like the kind of mustard you'd get with bad Chinese food. Used carefully, it can add a lot of really good flavor. So I use the mustard with some vinegar as a condiment to add a bit of flavor to things. You can add a touch of it to salad dressing, add it to stir fries, put it on steaks, whatever you'd like.
