This thread is specifically devoted to recipe's containing CHEESE as the protein ~ please feel welcome to share all your CHEESE IDEAS with us:

Because Becky likes warming up PIZZA, I've got a real quick and easy FAST PIZZA for you to try:
Snack bread / cracker (allowance) Tomato (allowance)
Mushrooms (allowance) Green Pepper (allowance)
Asparagus (allowance) (Optional)
Mozzarella Cheese Salt, black pepper and Italian Herbs
Method:
Place two snack bread crackers on a plate, slice about half a tomato thinly on top to cover most of the snack bread. Sprinkle with a bit of salt and black pepper. Slice the mushrooms on top, followed by the green pepper. Add some asparagus if you like. Place thinly sliced Mozzarella cheese on top and sprinkle with ‘Italian Herbs’. Microwave for 1 minute and 10 seconds and enjoy immediately.
ENJOY!!!

Quiche Florentine: :hungry:
Ricotta smooth style (allowance)
Spinach (allowance)
Garlic, salt, pepper and herbs
Salad: Lettuce, tomato, cucumber (remainder of veggie allowance)
Balsamic vinegar
Method: :thinking:
Combine ricotta, finely chopped spinach, garlic and seasonings. Lightly spray muffin tin with olive oli. Add mixture to muffin tin and bake in moderate oven for 12 - 15 minutes until starting to brown. Serve with salad drizzled with balsamic vinegar.

I though you might also enjoy this quick recipe – makes for a lovely lunch:
FETA SAUCE WITH VEGETABLES - remember Feta only once a week!
Feta cheese (allowance) + 4 t water
1 or 2 cracker bread portions
Favorite vegetables (allowance)
Method:
Crumble feta cheese into a small microwave dish and add water – heat for 1 minute. Mash until smooth. Add more water if too thick. Crumble cracker bread/s into sauce, mix and heat again. Cracker bread thickens the sauce.
Serve over cooked vegetables or cold over salad vegetables.

Hot Veggie & Cream Cheese Dip (Use measurements by taste and allowance)
Chop to desired size:
Green pepper
Onion
Tomato
Zucchini or spaghetti squash
Or other favorite veggie.
Sauté veggies using spray oil or a little water, add fat-free cream cheese and slowly stir till melted.
Remove from heat and stir in thinly sliced spinach leaves.
I like to add my favorite spices – curry powder is great! I use my crackers and/or other veggies as dippers. Remember to weigh the vegetables beforehand.

{tweety} Spinach & Cheese Rolls
Spinach from allowance
Mozarella, Ricotta or Feta cheese from allowance - cut into long strips
Salt, pepper and herbs to taste
Toothpicks
Wash spinach leaves well and microwave them flat until soft. Do not chop the spinach. When cold, sprinkle with salt, pepper and herbs. Roll strips of cheese in the spinach leaves. Secure with toothpicks.

CHEESY VEGETABLE BAKE
Tomato, onion, cauliflower, asparagus, spinach (allowance)
Cheese (allowance)
Seasoning + dash of curry powder
Cook vegetables until desired softness. In a pan lightly fry the tomato and onion. Combine all the vegetables on a plate and top with cheese.
Place under a grill until the cheese melts. MMmmmmm :drool:
Tip: always add a dash of curry powder to melted cheese dishes - adds colour, flavour and a little zing!

CAULIFLOWER CHEESE WITH A SURPRISE :drool:
Cauliflower (allowance)
Mozzarella cheese (allowance)
1 granny smith apple (large green type) (diced small)
Seasoning to taste / dried herbs
2 cracker breads or provitas
Method: :P
Steam your allowance of cauliflower with a granny smith apple diced small, add small amount of dried herbs, of choice. Place in a small casserole dish, for one. Cover cauliflower and apple with 2 crushed Cracker breads or provitas and your Mozzarella cheese allowance. Place uncovered in microwave until cheese melts.
This makes a satisfying meal, with an unexpected twist... :flirt:

CAPPUCINO CHEESECAKE {bdaycake}
2 Crisp breads
Ricotta cheese (allowance)
Sweetener
Sprite Zero
Coffee
Method: {cheerleader}
Crush crispbreads and add a little sweetener and Sprite Zero to moisten. Place in a muffin tin and press into base of 2 muffin holes. Chill for an hour.
Blend Ricotta, Sweetener and coffee. Spoon into cracker base and place into a hot oven 200 degrees for 10 minutes.
Eat vegetable allowance first and then immediately afterwards ENJOY your diet cheesecake as a treat! {cheerleader}

Family TIP: You could make the same Pizza for anyone in your family even if they are not on diet. If you like you can change the base for Pita bread and cover this first with tomato and onion mix.

Can you please let me know where I kind find the different types of cracker breads and the brands that I see refered to a lot??? I have been using Toll House Multigrain and Ritz Whole Wheat for right now....but I am curious about these other types that are large enough to make a mini pizza out of :drool:!

Two crackers that are 1PD approved and available here in the US are Saltines aka Premium crackers, and Ry-Vita crackers, which you can get at Whole Foods. I use four saltines as the base for my faux-pizza and it tastes great! :drool:
hey everyone. this is my first post. just ate a DELICIOUS lunch and wanted to share:
chop up mix of
onion
tomato
mushroom
green peppers
zuchinni
fry in pan with salt, garlic, pepper, oregano (other herbs if you like)
add mozarella cheese to frying pan. let it melt (i like to let it burn and crisp!)with veggies.
place on cracker.
EAT AND enjoy!!!!!
TASTES JUST LIKE VEGGIE PIZZA!!! HEAVEN!

Thanks for the recipes, my husband bought what I needed when he came home from work yesterday, and this morning I tried the veggie pizza for breakfast. My husband actually wanted to try it as well - and it was "really" good!! {boing}
The only thing is I felt guilty over the cheese, it seemed like so much cheese - Ha! Don't get me wrong - I love cheese!! :drool:
Tomorrow morning I'm fixing the Spinich Frittata, so I'm real excited for the extra options for breakfast.

I'm not big on mushrooms, but will eat them, but I was at the store the other day and they had something I thought some of you may try, if you haven't already:
It was a "big" portabella mushroom and they had it stuffed with like other veggies and topped with cheese, it actually looked pretty good.
I haven't tried it yet, but figured you could measure things up and it probably would make two meals, probably could use even veggies and then chicken, or meat of choice, instead of the cheese on top.
Anyway, directions just said to bake in the oven and enjoy!:)

Crackers (allowance)
Onion (allowance)

Ground cumin seeds, Basil, Oregano, Salt & Pepper
Method: :clover:
Finely chop the spinach and onion and mix with the Ricotta then season to taste. Microwave on high for 2 minutes or until veggies are cooked and the cheese has melted. Spread over crackers and ENJOY!!! :flirt:

(i swop it round and have my meals 3-2-1, as we have a saying in austria: have breakfast like an emperor, lunch like a king and dinner like a beggar). but fruiz in the evening have 2 b steamed or cooked anyway, as otherwise the belly bcomes a distillery and they turn in2 alcohol overnight (cheers-- hix!! -- good moaning!!)

I tried the stuffed portabella tonight. It was GREAT!!!! I chopped up tomatoes and put that and feta in the mushroom cap. I sprinkled it with Italian seasoning and baked it for 12-15 min. It was one of the best things i have made on this diet. I had left over veggie allowance so I cooked asparagus on the side, but ended up cutting it up and putting it on top of the mushroom cap. VERY GOOD!

2day i fixed myself some kind of "kiwi-delight", was a little on the sourish side, but good::party6:
i put my 160g of kiwi sliced up in the blender, added 2 small icecubes, few drops of stevia, my 2 crackers and some whipped cream...bruhar {rofl}, no, that was in my previous life...
so, leaving the whipped cream, i blended it till it was smooth and had a perfect in-between-meal, 2 1/2 hours after my breakfast, as i was hungry. -i had it in a bowl ate it with spoon (that way it "lasts longer").:P
if someone doesnt like it 2 sour, i'd recommend 2 only take half of the kiwi allowance and add half the mango. -in case one has an icemachine, u could stir it in there till iz frozen sorbet!! (id do more portions at once and keep it in the freezer in portion sizes)...:icecream:
btw: if u dont have an ice cream maker u can do it by stirring the fruit punch in a bowl thaz sitting in another bowl filled with ice water. every now and then put it in the freezer and when icy, start 2 stir again.(loz of work so i'd really do the portions 4 the week in one go).
that should really b nice!!
and obviously u can do that with any fruiz from your allowance.

i was about 2 post just the same kind of recipe-
well, with only onions, :stpatricks: spinach, garlic, s, pep and mozarella!
and the small cubed moz 2 b added after the spinach is cooked softly and a lid placed on the pan, 2 give the moz time 2 melt or 2 b put under grill.
but u did that {goodjob} already!

Feta cheese (allowance)
Grated Zucchini + chopped tomato (allowance)
Black pepper
2x Crackers (allowance)
Spray ‘n cook
Method: :flirt:
Gently fry in a pan the feta, zucchini and black pepper until cheese just melted. Place in between your two crackers then bake in oven for approx 5 minutes ( until crackers are warm) You can then top with a little diced tomato (don’t exceed allowance) or just have as is.

Large black mushrooms (allowance)
2 teaspoons of crushed garlic
Ricotta or Mozzarella cheese (allowance) oregano
Crackers (allowance)
Method: :party1:
Place mushroom in a cooking bowl. Remove stems from the mushrooms, cut and mix with the garlic. Fill the mushroom with garlic mixture, grate cheese over the mushroom and sprinkle with oregano herbs. Bake mushrooms in a preheated oven for 15 minutes till cheese is melted. Serve immediately. :hungry:

Method: {cheerleader}
Steam asparagus from allowance, heat small pan and add feta allowance, then stir until almost melted. Add asparagus and stir through until feta has melted. Serve with 2 cracker breads.

Cyberella, I'm glad to hear that you liked the Zucchini Hash Browns!! I love them too!!! Your non diet version sounds really fancy! My hubby also enjoys the Hash Brown's... but we like the standard version... sigh, oh the joy of cooking, things can be changed in so many ways! :party8:

My standard way to make Hash Browns is the recipe I posted with zucchini ... I love to use this... and I'm sure that Lfulwood you would like it too...
Before learning about how starch reacts in the body etc I use to make Hash Browns with potato but these are much healthier because they don't trigger insulin the same way that potato does. So they make for a good breakfast. Not having starch for breakfast is part of our ongoing lifestyle change and we like it so, BARGAIN!

GOURMET MUSHROOMS & CHEESE :hungry:
Mushrooms, Spring onion, celery (allowance)
Mozzarella Cheese (allowance)
Method: :drool:
Put 3 or 4 mushrooms in a shallow bowl. Chop celery and spring onion finely and sprinkle on top of mushrooms. Smother with mozzarella cheese. Grill in oven or microwave until mushrooms are soft and cheese golden or melted. Mmmmm :love3:

Had seen this post a while back and then didn't remember where I saw it. Wanted to let you know that I tried this a week or so ago and LOVED IT!!! It was so easy and so delicious. I think I'll continue to make this even after I'm done with this diet. Thanks for the suggestion. :)

Spray a little olive oil in your skillet and lightly sauté zucchini or yellow squash "coins" in the pan. I cut the coins about 3/8" thick so they don't just disappear. Season with salt & pepper & I also use a Creole seasoning mix, very sparingly.
When they're almost done, add some chopped garlic (I use a pre-chopped variety that comes in olive oil).
Arrange the coins on 4 saltine crackers laid out to form a square on lightly oiled foil. It's easier to handle if you put the foil on a cookie sheet. Top the whole thing with shredded mozzerella and put it under the broiler for a minute or so, until the cheese has melted and is browning.
Serve immediately!

This sounds really nice - except for the Creole seasoning mix of course - and I think you were probably expecting me to say so... :flirt: seasoning mixes normally have ingredients that aren't allowed because those ingredients can slow your progress down and we don't want that to happen :noway:
Tell me, do you think this could be nice with freshly ground black pepper? Or will that not be enough zing?? I'm not really that big on cooking with chillies, but I am wondering?? if you used the zucchini and fried it with some crushed green chillies, could that give your recipe the necessary little bite??

Oh, Shasha! Of course I knew you would catch me on my Creole spice. Black pepper is fine, and the garlic adds a little zip as well. But I'm curious: if green chillies are allowed, why not red?? And what's up with cayenne pepper? So often you see cayenne used in weight loss formulas, I thought it was a metabolic stimulator?
Anyhow, ladies, I stand corrected, but the Cheesy Bits are good without the Creole mix, too! Add oregano to it.

Green peppers are allowed on the 1st Personal Diet Program, but not red or yellow... that is because the red and yellow ones contain more sugar than the green ones. Typically you can actually taste that they are sweeter too.
Same with green chillies, if you leave them long enough, they actually become red...
Dr Cohen says that no red peppers are allowed and I believe it's due to the increased sugar content - that is why cayenne pepper is not allowed nor is paprika etc. I believe these foods can trigger hunger and they interfere with Human Growth Hormone production - remember this is your fat burning hormone and the success of the program is related to increasing this very hormone.
Cayenne pepper is an excellent product, I have read an article on the fact that it is excellent heart food and great for preventing heart attacks etc. Good as it may be and tasty of course, you should avoid using it for the short while that you will be on the 1st Personal Diet Program because we don't want anything to slow your progress down. Dieting is not easy and we want you to reach your goal as FAST as you can

My husband makes a similar dish with portobella mushrooms. One Portobella weighs too much, but if we cut it to size, is it OK?
The recipe:
1 portobella mushroom - cut out the stem and chop it, cut the cap in half
2 portions of scallions
2 x enough celery or other allowed vegetable - whatever amount is left after adding in the mushroom
Allowed amount of Feta
oregano
Chop all the vegetables and water-saute them. Season. Place on allowed portion of mushroom and bake a few minutes with the Feta on top. This works for two portions at a time.

I've been reading the recipes enough . . . thought I should start to share!
Sauté Zucchini (allowance sliced thin coins) in spray olive oil with garlic S&P. Mix ricotta cheese (1/2 cheese allowance) with garlic, S&P, oregano, parsley.
Put cooked coins in a single layer in a small baking dish, top with ricotta mixture and another layer of zucchini. Top with sliced tomato (balance of allowance) and mozzarella (1/2 cheese allowance) and bake. When cheese melts broil to brown.

CAULIFLOWER CHEESE :)
Cauliflower (allowance)
Ricotta cheese (2/3 allowance)
Mozzarella cheese (1/3 allowance)
Curry powder
Salt and pepper
Method: :P
Cut cauliflower florets into small pieces and microwave for about 2 minutes or until soft. Stir through Ricotta cheese, season with salt and pepper, and place mixture into a small bowl. Top with mozzarella cheese and sprinkle with curry powder. Place under the grill until bubbling and golden brown.

Hi everyone.. I am very new to all this. I looked over all these great recipes and want to add a great summer one.
Take your portion of Cottage Cheese mix with your portion of vegie's I use Cucumber and Tomato and season with black pepper to taste. Eat with some crackers if desired.
This is quick and fast and yummy! I have eaten this for years just in bigger portions before the diet.:party1: Enjoy
Hope I did this right I have never done this before.. I'm sure one of my eight kids could show me how but I can be independent~~

10rus this sounds really nice nearly like Tzatiki's Dip that the Greeks make with Yoghurt onions cucumber and Olive Oil will have to drop the Oil though and then add Herbs and Spices and eat it with crackers Hmmmmmm Could be god for Supper!:innocent3:

I created a new cottage cheese dish. I am still thinking about whether I like it or not. It might just grow on me. Here it is:
Cottage Cheese
Spaghetti Squash
Cinnamon
Sweetener
Mix the cottage cheese and speghetti squash with the cinnamon and sweetener (I used Stevia and only about 1/4 tsp. - just a little bit sweet). You can eat it cold or warm it in the microwave for about 35 secs. I tried it both ways and I thought it was much better warm. I used this for my Meal 1.

I am finding it difficult to use my cottage cheese because when I measure it out it is so very little compared to what I get with mozzarella cheese. I feel like I'm hardly getting anything to eat. So here I have a tub of cottage cheese that actually might go bad before I can eat it all. I may not buy any more of it after this. I can't wrap my brain around cauliflower and cottage cheese together. I guess I should try it before I pass judgement.

Here's something I've been making for lunch -
As allowed:
Tomato
Onion
Cucumber
Mozzarella cheese
1 Tbsp. balsamic vinegar
Dash of Splenda/sweetener, to taste
Dash of pepper
Slice tomato, onion, cucumber and cheese. Place in a small bowl. Add sweetener to the balsamic and pour over the cheese/veggie mixture. I usually let this marinate for a while, but it also yummy right away!

You all are so lucky to find fat free philadelphia and low fat or fat free mozzarella chese! I've been to every possible supermarket, dairy shop, etc. and they simple do not exist in NZ! :sadeyes:
I've only eaten the other cheeses allowed. Feta only once, since the first time I ate it, it made me eat 4 or 5 extra crackers! :(
So, enjoy your yummy cheese dishes, especially the mozzarela ones!

I am not a fan of most cheese...I've been having string cheese when I need to on plan, which is okay, but I have discovered something amazing and delicious AND ON PLAN!
Philadelphia Fat Free Cream Cheese (allowance)
1 packet of sweetener (splenda, equal, stevia)
cinnamon
Mix together and spread on crackers (allowance)
I am telling you it's heaven on earth :innocent2: and my saving grace!

Veggie allowance divide into:
2/3 zucchini and yellow squash
1/3 tomato and onion
Cheese allowance
Garlic powder/chopped garlic
Cut zucchini and squash into wheels (make sure the slices are not too thick so that they will not overcook without going soft). Sprinkle garlic powder lightly over the mixed zucchini and squash. In pan, cook with cooking spray to make soft with a little bit of water. Add onion and cook until soft/translucent. Add tomato and cook till soft (all this is in a span of 5 or so minutes under medium heat). Sprinkle cheese over mixture and take off heat and allow cheese to melt. Sprinkle with black pepper if needed and cilantro.

Three Cheese "Pasta" Bake
Use ricotta, cottage, and mozzarella, blend amounts to what you like. I use a little cottage cheese, a little more ricotta, and the majority mozzarella.
Use spinach, tomato, and spaghetti squash. I use the max allowance of tomato, just a little bit of spinach, and fill the rest with spaghetti squash.
2 cracker portions. I steam the spinach before I mix it. Crush crackers and mix everything together with garlic powder or chopped garlic and oregano. Bake in a small baking pan for 15 to 20 minutes at 350 degrees. I like to bake it until the top is a bit brown, so maybe a little bit more than 20 mins.

okay, your cheese bake and the sweet cream cheese sounds good...I'll give'em both a go!
Lately, this is what I've been doing with my Mozzerella:
- Cube mozzerella allowance
- Cube tomatoe allowance (add the juice in your weighing, don't let it escape! It helps add moisture and evenly coats everything with the herbs/seasonings)
- Make up balance of veggie allowance with celery
- Chop fresh basil to your liking
- Add fresh ground pepper (if you have an adjustable grinder, I like it on medium)
- Add a touch of garlic powder
- Sprinkle a bit of oregeno
Mix it all together and it's ready! It's really refreshing and yummy.

Spicy Cheese Spread
Cream Cheese (allowance)
Onion + Tomato (Around half of allowance)
Cilantro
Lots of Garlic
Put all the non-cream-cheese ingredients in a blender, until smooth, kind of. Then fold the cream cheese into it. Use the rest of your veggie allowance as a delivery mechanism for this spread, or you can use some of your crackers. I personally stuff some poached portobella mushroom caps with the rest of my allowance, and put the rest of the spread on crackers.

Cheese Skin
Low-fat Mozzarella (allowance)
Cooking spray
Take a non-stick frying pan, and hit it with cooking spray. Glob the cheese on there in a pile, and turn the heat on low. The cheese will melt, and then it will brown on one side. Once it's brown and holding its shape a bit, flip it over, and do it again. When both sides are a golden brown, remove, and arrange it in the shape you want (I used a taco-shell shape). Let it cool in this shape. Wrap it in plastic wrap, and keep it at around room temperature. You can then fill this cheesy shell with your vegetables.

I've been on these forums for at least two months now, scouring for good recipes. Thank you very much for all the help!
I wanted to share one that my wife and I have come up with that we like very much. It's a little complicated, but not too bad. Best of all, it's yummy!
Spaghetti with Spicy Cream Sauce
Spaghetti Squash (from allowance) - usually about 2/5ths of allowance
Tomato (from allowance) - usually about 3/5ths of allowance
Fresh basil, garlic and oregano (Don't use the dried stuff)
Pepper
Ricotta Cheese from allowance
For the squash:
Pre-heat your oven to 375-degrees
Split the squash length-wise down the middle
Fill a 9x13 pan with warm water
Place the squash halves face down in the water
Bake in the oven for 45 minutes
At 45 minutes, take the squash out of the oven and flip it over so it is facing up in the pan
Salt and pepper the meat of the sqaush
Bake at 375-degrees for 15 more minutes
Once it's done, let it cool for 5 minutes
Then, take a spoon and scoop out the flesh of the squash. It's just like spaghetti noodles!
For the sauce:
Sautee your tomatoes with an olive oil spray over medium-high heat in the basil, oregano and garlic until it becomes fragrant (about 2-3 minutes)
Put the sauteed tomatoes into a food processor with your cheese allowance
Liberally apply pepper
Process the mixture for about 20-30 seconds until combined.
To combine:
Sautee the spaghetti squash in a pan for 30-seconds with fresh basil and oregano
Dump the spicy tomato sauce over the noodles in the pan
Sautee for another 20 seconds - Be quick about this!
Then, serve immediately!
Enjoy!
