This thread is specifically devoted to recipe's containing CHICKEN as the protein ~ please feel welcome to share all your something CHICKEN & POULTRY IDEAS with us:

Here is a nice idea for chicken:


Chicken with vegetables in the Oven

1 skinless and boneless thin chicken fillet (allowance)

Your favorite vegetables chopped (tomato, onion, etc)

Olive Oil Pam Spray

Fresh garlic to taste



Preheat oven to 400ºF. Spray a little olive oil Pam on a baking sheet.

Place the chicken fillet on the baking sheet and arrange the vegetables around it.

Sprinkle the garlic on the chicken fillet and salt on the vegetables.

Spray just a little olive oil Pam on the chicken and vegetables.

Bake the chicken until done for about 15 minutes.

Enjoy!

Another one of my favorite dishes is a spicy shrimp or chicken mock Jambalaya (minus the sausage of course), or Gumbo

I like it best with shrimp

So...
Using your allowances....
Shrimp
Tomato (enough to make a red sauce approx. half a medium tomato)
celery
green pepper
onion

Cube up veggies
Add tomato to skillet with cooking spray
Cook on medium until tomato breaks down and starts to make a paste (just a few minutes)
Add black pepper (I used a lot I love the heat)
Add garlic
Add curry (all of the spices add to your taste)
Add in rest of veggies
Next add 1/2 cup of water
Throw in shrimp
Add in a bay leaf
Sprinkle with 1 tablespoon (approx.) Splenda
Cover and simmer for 20 minutes on low
If you want it more liquidy add more water.
Grab your cracker allowance and dig in.

Mmmm – mustard for a little ZIP you say? Mmmm ... how about :chicken:

WARM CHICKEN SALAD with a bit of ZIP of course:

Chicken breast (allowance) Mixed lettuce, celery (allowance)
Orange peeled & segmented (allowance) freshly ground black pepper

Dressing:
Orange juice & 1 tspn grated rind (from above orange)
Balsamic vinegar, garlic, salt, 1 tspn mustard powder (for a little ZIP), Italian herbs

Method:
Tear lettuce leaves. Toss in salad bowl. Add orange segments & celery. Slice chicken thinly, cook in wok stir fry with vinegar for 3 – 4 minutes until golden. Sprinkle with black pepper, add to lettuce. Place dressing ingredients into screw top jar & shake until well combined. Pour over salad and enjoy.

Note: You are not allowed to have any bought orange juice on the program. You may make your own. This means that you can take your 1 orange from your allowance and squeeze this to obtain the juice. Alternatively you may peel your orange and blend this with some water to make juice.

Tip: Eating a whole fruit is much more satisfying than having a little bit of juice. If you juice your fruit you won't get the benefit of as much fibre! So I recommend you just use a bit of juice and eat the rest :-)[/B]

CHICKEN-LICKIN-COOKING : :chicken:

1 x Cooking bag
Chicken (allowance)
1 x Teaspoon curry powder
1 x Teaspoon vinegar
Sweetener, Salt & Pepper
Pinch of Thyme

Method: :chicken:
Mix curry powder, vinegar, sweetener, salt & pepper and thyme. Place chicken in cooking bag. Pour the mixture over chicken. Bake chicken in oven or microwave oven until cooked and enjoy with veggies or a cripy salad. :clover:

Tip: The uncooked chicken with mixture can be prepared well in advance and stored in a freezer until cooking is required.

CURRY MANGO :chicken: CHICKEN:

Chicken (allowance)
Cauliflower
Garlic
½ mushroom & ¼ tomato (allowance)
Olive oil spray, Salt & pepper, 1 teaspoon curry powder
2 x cracker breads (allowance)
100g of diced Mango (allowance)

Method: :chicken:
Spray pan with olive oil, add crushed garlic & diced chicken & stir fry.
When chicken becomes slightly golden add in cut up vegetables & stir fry.
Add in 1 teaspoon curry powder, salt & pepper and continue to stir fry.
After 1 minute add in 1 glass of water and simmer. {violin}
After 10 minutes, add in 2 crackers crushed and 1 teaspoon of mayonnaise & 100g of diced mango.
Stir occasionally till all water is evaporated & serve.

CURRY CHICKEN KEBABS ::chicken:

Chicken (allowance)
200ml Vinegar
1 tea spoon curry powder
Sweetener
Herbs to taste
Cauliflower(allowance)
Zucchini cubes (allowance)
Mushrooms (allowance)
Onion rings (allowance)
Apple (1/2allowance)
Tomato (allowance)
Peaches (1/4 allowance)
Mango (1/4 allowance)

Method::chicken:
Cut chicken into bite sizes. Mix curry powder with vinegar, sweetener and herbs. Add vegetables / fruit to taste. Cover chicken with mixture and store for 48 hours in refrigerator. Thread the chicken and vegetables / fruit alternatively on skewers. Grill kebabs or barbecue for 6-8 minutes, turning once or until the chicken is cooked.

You won't even know this is diet food!{wave}

CHICKEN COLESLAW : :chicken: & :clover:

Skinless Chicken breast sliced into strips (allowance)
Cabbage+ celery finely shredded (allowance)
1 teaspoon low fat mayo
Mixed dried herbs, salt + pepper

Method::flirt:
Sprinkle the mixed herbs in a frying pan that has been lightly sprayed with oil. Add the chicken strips one by one so they cook nice & flat. Sprinkle more herbs on the top and flip them over. They will cook very quickly. Store the strips in the fridge to cool.
Take the cabbage and the celery and then add the mayo. Give it a good mix. Serve the coleslaw in a bowl with the chicken on top.

Tip: The cold chicken is great in any salad so you can cook up a second allowance (separately) and have it ready for another meal the next day.

coleslaw is just the idea of the day-
i bought celery and cabbage and didnt really know what 2 do with it/ now here is my answer! thanx!
eventhough i will leave the chicken 2 produce some more eggs and not put it in my salad {tweety}-
but admittedly the vegetarian-version of 1st pd is getting boring much faster it seems...:rolling:-
but then again, my choice, my problem {rofl}

BAKED MANGO CHICKEN :hungry:

Chicken (allowance)
Mango (fruit allowance)
Steamed veggies of your choice (allowance)
Garlic powder
Curry powder
Salt and pepper

Method: :flirt:

Cut a hole in the centre of the chicken. Cut mango into slices. Slide 1 or 2 slices of the mango into the chicken. Lightly sprinkle the chicken with garlic powder or curry powder. Put the chicken on foil and use the rest of the mango to cover the chicken. Bake for 15 minutes, open foil and brown for 5-10 min, then serve with steamed veggies from allowance. :love1:

CHICKEN RISOTTO :chicken:

Minced chicken Breast (allowance)
Equal amounts of Zucchini and squash to make up vegetable allowance minus 15grams
15gram Onion
Herbs and seasoning to taste

Method: :hii:
Grate zucchini & squash and thinly slice onion. Brown chicken mince in wok, add vegetables and herbs and wok toss until cooked. Tastes great hot or cold. :hungry:

SPICY CHICKEN PATTIES :chicken:

Chicken (allowance)
Spring onion (allowance)
Lemon (from fruit allowance) or vinegar (free)

Method: :chicken:

Combine all the ingredients together and mix well. Shape into patties. Heat a non-stick fry pan over a medium heat, spray lightly with oil, add patties and cook for about 5 minutes on each side, or until cooked through. Squeeze the lemon or vinegar onto cooked patties, and serve with a salad from veggie allowance.

“CREAMY” MUSTARD CHICKEN :hungry:

Chicken-cubed (allowance)
Mushrooms- sliced (allowance)
10g onion (allowance)
2 table spoons grated zucchini (allowance)
Garlic powder & Mustard powder (3tsp)
Vinegar and water (1 tbsp each)
Sweetener, salt and pepper

Method: :hungry:
Spray non-stick pan with oil and fry chicken for 2 minutes. Add mushrooms and continue frying until mushrooms are done. Remove both from pan. In same pan sauté onion with grated Zucchini and garlic powder for 2 minutes stirring constantly. Prepare a paste from mustard powder.

Return chicken / mushroom mixture to pan, stir through, season with salt and pepper and cook covered until chicken is done (add a bit more water if needed). Serve with the remaining veggie allowance- maybe on a bed of lettuce leaves or salad combination of your choice.

Chicken (allowance)
1 garlic clove (sliced into thin pieces or minced)
Salt, pepper to taste
Orange (allowance)
Vinegar
1 cup Diet Sprite
1 packet Splenda (if needed)

1. In a non-stick skillet, add Diet Sprite, garlic, and chicken and cook on medium high heat for 5 minutes. Reduce heat and cook 5-7 minutes, or until chicken cooked. Salt and pepper to taste. Transfer chicken to plate and keep warm.
2. While chicken is cooking, grate approx. ¼ of orange peel. Half your orange and squeeze the juice into a small container. Cut off any white pith and peel from remaining half, and cut into small sections. Add fruit sections to juice. Add vinegar (to taste – I use apple cider vinegar). Add Splenda, if needed.
3. Add entire juice/fruit/vinegar mixture to skillet after removing chicken. Boil for two minutes. If it boils off too much, you can add more Sprite or water.
4. Return chicken to skillet, turning to coat with sauce.

Option 1: Serve immediately with veggie allowance, using remaining “sauce” in pan over your chicken and/or veggies.

Option 2: Cool the chicken and serve over spinach salad. In this case, I recommend saving your half orange and slicing (uncooked) into the salad. Makes for a very interesting salad… and your “sauce” becomes a nice salad dressing.

THAI CHICKEN BURGERS :chicken:

Mince your chicken (allowance)
Onion (allowance)
Dried Garlic
Curry Powder
Salt & Pepper to Taste
½ Tea spoon Dry Cumin
Fresh Coriander (allowance)

Method::rolling2:
Combine all ingredients. Shape into burgers, approx 3.
Fry in non stick pan with a little spray oil. Serve with salad from allowance or serve with cooked asparagus, baby marrows and patties on a bed of lettuce.

CHICKEN BREAST STUFFED WITH SPINACH & TOMATO :party1:

Chicken Breast (allowance)
Spinach and Tomato (allowance)
Dried garlic, pepper & salt to taste

Method: :jumping2:
Slice the chicken breast horizontally. Flatten the chicken breast and place a layer of spinach leaves, sliced tomato, and sprinkle with dried garlic and salt and pepper. Fold over the chicken to cover the vegetables and secure with toothpicks. Heat a non stick pan over a medium heat, spray with a little oil and cook the chicken for 4-5 minutes on each side, or until cooked through and golden brown. Cut into thick slices and serve over remainder of steamed vegetables from your allowance.

Baked Chicken Nuggets

Cube chicken allowance

Take 1 cracker allowance (saltines worked really well) and put in food processor, add desired herbs and spices
(I used garlic powder, salt and pepper)
mix until crumby

put crumbs in baggie, add chicken cubes and shake to coat

Spray cookie sheet with cooking spray
Spread out chicken, make sure to crumble leftover crumbs over the pieces
Spray the chicken with the cooking spray

Bake at 375 degrees 20-30 min. depending on size of nuggets

You can make any of the sauces in the other threads to use for dipping!

Enjoy!

Note: you can do more than 1 batch at a time, I did 3.

Ifulwood, that sounds positively yummy. :drool: I actually love chicken, but for some reason haven't ate it much on this diet. I think I've convinced myself that the beef is more filling or something. But this sounds wonderful and to be able to cook ahead is even better. Do you just refrigerate the other batches, or do they freeze well? Thanks for the recipe!!!

I put mine in the fridge but I imagine you could freeze them ahead of time, and then treat them like the ones you can buy in the store. Just remember to keep portions separate.

I only get chicken for my meal 2 which usually ends up being lunch, so I have to cook ahead if I want chicken! And everyone today was saying how good they smelled!
It's always good when the non dieters are coveting YOUR food for a change!

TIP for you: when you want chicken for dinner, you may simply swop your meals around ie: Meal 3 for lunch and Meal 2 for dinner… You can swop your meals around at any time so you could have: Meal 3 for breakfast, Meal 1 can be lunch, Meal 2 can be dinner…

Hi there all,

I got this off the Australian site and thought it sounded great for those times when you want gravy! I don't know about pouring it over lettuce though. :thinking: I would do separate veggies.

I have included the original person's name at the end to give due credit...

Chicken Schnitzel with Gravy

1 Thin slice chicken breast (allowance)
1 Paradise Lite cracker (or whatever we use from our brands and allowance)
Good Lettuce Leaves (allowance)
Half tomato (skin removed), finely chopped
Salt
Pepper
Dried Rosemary
Dried Thyme
Half small clove of Garlic
1 teaspoon of Onion, finely chopped
2 teaspoons Balsamic Vinegar
1 teaspoon Mayonnaise
Half cup of water

Crush cracker into tiny crumbs using mortar and pestle. Add small amount of salt and pepper to crushed cracker and mix in. Coat chicken breast with crumbs. Reserve any left over crumbs.
In a small saucepan, slowly heat onion, garlic, rosemary, tiny amount of salt, pepper, thyme and tomato until onion goes glassy. Add vinegar, stir in. Add water and remaining cracker crumbs (good for thickening the gravy), stir.
Place chicken breast on non-stick grill or frypan. Cook slowly until crumbs are brown.
Simmer gravy until it thickens and reduces. Add mayonnaise and stir quickly into gravy. Simmer until the mixture has the consistency of gravy. Remove from heat.
Place chicken schnitzel on lettuce and pour gravy over the chicken.
Really tasty and filling!

MANGO (OR APRICOT, PEACH) CHICKEN:P

Chicken sliced (allowance)
30g Onion (allowance)
100g Mango or 1 Apricot or 1 Peach
Splash of balsamic vinegar
Splash of Sprite Zero
Salt & pepper (to taste)
Sprinkle of dried coriander or parsley
Vegetables for salad (balance of allowance – 30g for onion)

Method: :flirt:
Stir fry onion and chicken until chicken is almost cooked. (You may need to add a little water.) Add splash of vinegar, sprite, salt and pepper, herbs and mango slices. Stir fry until mango softens and chicken is cooked. Serve with crisp garden salad from the balance of your veggie allowance.

Tip: Substitute the mango for peach or apricot if you like! :hungry: ENJOY!

Shawn, I did read your message and I am so pleased that your jalapeño helps! MrPeel and I love our spicy stuff, so we rely on the allowed "zings" to keep us going.

You might also like our new fave: ground turkey or ground buffalo mixed with diced mild green chilies and pan-fried as a burger - nice & yummy! :hungry:

Thanks, Shasha! We actually had it tonight with ground turkey - and usually I mix the diced chilis throughout the meat, but tonight I tried dividing each meat portion in half, flattening the two pieces and covering one with the diced chilis - then put it together like a sandwich and pan fried it. Chili-stuffed turkey burgers!! :drool:

Stirfry Lemon Chicken,:chicken:
Cube chicken
Powder sweetner
Lemon
Cabbage
Zucchini
Green Pepper

Sprinkle sweetner onto chicken, squeeze on lemon juice, leave to marinade while you slice up your veges,
Fry chicken in pan, gently as it will burn easily with the lemon but it will go a nice golden, once ready, I spray the veges very lightly with oil (rather than the pan, your choice)then add them to the chicken, drizzle with some extra lemon juice, stirfry till wilted/heated through, serve and I hope you enjoy.{pot}

This is my latest favourite to take to work for lunch.

Curry and Ginger Mock Kiwi Soup
cook onion with curry to taste
Add sliced chicken and fry till golden
Add water and chopped up veges from the rest of your allocation.(I use cabbage, capsicum and celery)
Grate fresh ginger in to taste.
Add 1/2 chopped apple.
Simmer adding more water or reducing fluid to taste.
(the sweeter the apple the sweeter the compliement to the curry, a grannysmith will make quite a different taste, but still very nice){pot}

The guide calls it a pepper (and suppose to be green), sorry for the confusion. I made it every day for work last week, found it very filling and tasty, let me know what you think, would love to know your choice of vege.

Garlic Lemon Chicken (a Spanish tapas dish)

Chicken - Allowance
2 Cloves garlic, finely chopped
Onion (allowance - no more than 2 Tbsp), finely chopped (Shallot for those after refeed)
1/2 teaspoon paprika: NOT ALLOWED ON THE DIET - CONSIDER AN ALTERNATIVE TO PAPRIKA.. Any ideas? Jalapenos?
Salt/Pepper to taste
Juice of 1 Lemon - From your fruit allowance -- if you're willing to give up the fruit, if not then you can just make it w/o the lemon and call it garlic chicken :)
1 Tbsp fresh parsley (you can use dried)
Olive Oil Spray

Directions:
Flatten the chicken with a meat tenderizer hammer / rolling pin using heavy duty wax paper or plastic wrap. Goal: 1/4" thick.
Cut into 1/2" slices
Spray bottom of wok (or pan) with olive oil spray (Pam, etc)
Combine chicken, onion and garlic with paprika and stir fry until lightly browned or fully cooked. Remove from heat.
Add in fresh parsley and lemon juice.
Salt/Pepper to taste.
Mix and serve.
(If too "liquidy" reduce a bit -- cook until juice thickens/evaporates)

If you want to look fancy, you can garnish with a lemon wedge and a sprig of flat parsley.

This would go great with the spaghetti squash. For those after refeed you can use this with whole grain pasta as your carb meal.

The recipe sounds marvelous...however, we who are still on the diet and not having gone through refeed yet, are not allowed paprika:

In a post by Shasha: About the Paprika – it’s made from red peppers and should not be use, neither should you use cayenne pepper or red pepper…

Bummer....

OOPS! Sorry! I lumped paprika into spices which are ok .... Save it for after refeed then :) Thanks for catching that Phyllis!!! And here I thought it was a good Cohen meal. See, always have to stay on top of the ingredient list. Maybe some jalapenos instead? :)

I don't know if it's already been posted but I like to take the chicken stir fry that's in the receipe book and at the end I'll throw in some salad dressing from the Chicken Salad (60 ml of Basalmic Vinegar, 60 ml of water and 1 x sweetner). It adds a great taste and actually I use this as a dressing for all my salads. It makes the Basalmic Vinegar not so tart or tangy.

This one is my favourite:

Chicken (allowance)
Veg or salad (Allowance)
Curry Powder + a little salt

Cut chicken into strips and sprinkle a little salt and a liberal quantity of curry powder on either side of the chicken.

Heat a cast iron griddle pan with a spritz of olive oil spray and fry the strips on both sides until cooked approx 10min (depending on thickness)

Serve with assortment of steamed veg or chop up into a salad

Mmmmmmm.... if you like a little spice this one is for you!

I tried this last night and it tasted good.

Chicken(Allowance)
Onions (allowance)
Mushrooms (Allowance
Lettuce ( Allowance)
Garlic
Herbs
Mayonaise (allowance)

Boil Chicken with Garlic and Ginger and other herbs. Once cooked and cooled shred the chicken.

Slice mushrooms and Onions and finely chop garlic.

In a pan, spray a little oil and fry Onion and Garlic till onions are soft. Spray a little oil on the mushrooms and add that to pan. Fry until mushrooms brown slightly. Add the Shredded chicken into the pan, stir and then add Mayonaise.

Shred the lettuce, serve the Chicken and Mushroom and garnish with the lettuce. Alternativley, you can make a wrap with the lettuce.

I enjoyed it.

Skillet Chicken w/Veggies

chicken allotment
1/2 allot. mushroom
1/2 allot. zucchini
1/3 c. water
garlic
onion
thyme
salt
pepper

Spray skillet lightly with cooking spray. Saute mushrooms with garlic and onion until soft. Add 1/3 water, zucchini, chicken and herbs to taste. Boil until chicken is fully cooked and zucchini is tender. Very moist (I even use the liquid left in the skillet as a kind of "gravy" - nothing goes to waste!!)

Orange Ginger Chicken Spinach Salad


Brown in pan sprayed with butter flavored spray:

Chicken breast allowance, thinly sliced on angle
2 cloves fresh garlic, chopped fine or through garlic press (or powdered
garlic...but fresh is better)

Add:

a few thin slices of fresh ginger, to taste (I store my ginger in the freezer and then
you can slice off really thin sections while it’s frozen)
zest of one orange

Heat through.

Add:
2 Tbsp. Raspberry flavored vinegar
2 Tbsp. Water
1 Tbsp. Equal (or similar sweetener)

Mix all together adding more water or vinegar until it looks like about the right amount for your salad, Allow to cool slightly (or totally).

Salad (to total vegetable allowance):
Leaf lettuce (or use all spinach)
Baby spinach leaves
Tomato wedges
Red onion slices

Pour the chicken/dressing over the salad.
Top with remaining orange (peeled, sliced into rounds and then cut in half).

I prepared 4 batches of this today to get me through this week!!! Usually I come home for lunch every day which is a blessing!! But this week I will be eating 3 lunches and 1 dinner away from home in restaurants. So...I'll be eating a lot of Orange Ginger Chicken salads this week! I prepared the chicken and sauce and then when it cooled down I put it into ziploc sandwich bags. Then all I have to do is put my spinach/lettuce into a bowl, add the tomato and onion and slice the orange and I'm out the door!!

Hello All,
Tonight I made a tasty burger w/ ground turkey.
I used the 99% fat free turkey which I find very dry so I
added a tablespoon of organic unsweetened applesauce. I read the ingredients and it only has organic apples & water in it.
I chopped up some onion,
mushroom & spinach = 25g
sea salt, peper, dry garlic, italian seasoning, & very little nutmeg.
Mix is up really good, make your patty.
I put the burger on 75g of lettuce w/ Raspberry Balsamic Vingar on it( I cut it w/a little water)
Hope its legal because it was good

Not sure about the rationale behind no applesauce....probably something to do with not as much fiber to counteract the natural sugar in the apple OR not being able to properly measure out how much applesauce is equivalent to an apple.
BUT....you could finely dice an apple and put that in with the meat...I bet that would be good.

My husband and I have come up with this recipe, and I must admit I find myself craving it often.... let me know what you think

chicken allotment (sliced in half horizontally to stuff, don't cut completely through)
15-20g spinach finely chopped
1 tsp light mayo
Minced garlic
salt and pepper to taste
Basil
Oregano

Lay chicken out like a sandwich and season with minced garlic, salt, pepper, basil and oregano. Mix finely chopped spinach and mayo together until well mixed. Place in between chicken and fold over. Secure with toothpicks! Sprinkle outer part of chicken with pepper and basil. BBQ or use George Forman grill!

Serve with remaining portion of veggies!

Tonight I was making cauliflower and decided to mash about
30g's into the turkey-(because it gets so dry) and made patty's. I sprinkled it w/ garlic powder, salt&pepper- put it over lettuce- it was really good and moist.

I could never get chicken to taste very good during the diet, so I used mostly fish and turkey (not ground) for protein sources.

The Foreman grill worked great and also just a pan and lid over medium heat for just a few minutes and the turkey or fish was tender and delicious.

Chicken just never tasted as good or came out tender this way so I stuck to turkey and fish and now in maintenance, still cook it the same way.

Hey all,
I made a curry chicken on lettuce wrap tonight. so fresh and prefect for summer. It is in the 100's here!
Chicken allowance, spary non-stick pan with Pam and begin to cook, coat in curry and add garlic, salt and pepper, and a bit of sprite zero. use half of your veggie allowance for green pepper, japaleno, onion, muchroom and celery. diec them up small and add to the pan. cover, but make sure there is enough liquid so it doesn't dry out. Serve over the other half of your veggie allowance, iceberg leaf lettuce, and eat as a wrap. It was good!Now that I cut up all those veggies, I'll probably have it for lunch I liked it so much!:drool:

Sounds yummy! I'll have to give it a try....

I made a good fish dish tonight. I browned (skin side up) tilapia in a little butter flavored Pam, flipped it over and then cut up fresh dill (one blossom and some of the feathery leaves) and put it on top of the fish. Cover the pan and continue cooking until flakey. YUM, it was so good! I also had fresh asparagus cooked in the microwave and added a sprig of fresh dill with that, too! It was a really good dinner!

If you like Dill here is something you might like. Here is a little something I threw together for my wife and I last night (she is also doing the diet) sometimes it’s not about where we are it more about the journey… so forgive me if I pretend that I’m not on a diet but simply live in a world with limited food options and quantizes all of which have unlimited possibilities. So here is one of my attempts at a nuvo cuisine experience. At least when time permits.


Dill Chicken Wrapped Asparagus

Ingredients:

Chicken (allowance)
Asparagus (allowance)
Salt
Onion powder (allowance)
Lime Command (dried crushed lime rind you could substitute: lemon or orange zest or even the juice but I prefer the zest of the rind and when its dried and ground into a powder it takes just a small pinch to add a spark of flavor)
Dill weed
Fat free mayonnaise (1 tsp allowance)

Chicken pound flat like a tortilla
Sprinkle Salt, Onion powder, and a pinch of lime command Dill weed over flattened chicken

Blanch Asparagus in for 8-10 min in a steamer till bright green but still crisp.

Lay all of the asparagus diagonally across flattened chicken.
Roll up chicken and hold with toothpick if necessary.

Glaze topping:

Mix light mayonnaise a touch of onion powder, dill, and salt with 1 tbsp of water to thin, spread over top of chicken and vegetables.

Bake in oven 375 degrees. 16-20 min. I also place about 2 tbsp of water in the bottom of the pan before placing in the oven.

Top with sprig of fresh dill or sprinkled with a some dried dill and serve.:hungry:


Of course desert had to follow so I filled a couple of glasses with diced chilled honeydew melon and kiwi fruit… and the evening was wonderful. :love4:

This recipe was AMAZING and it tasted like it came from a Gourmet Restaurant... great flavor and I loved it!! It was very different from our day-to-day meals...:plane:

Chicken Meat Balls

1 tsp chopped onion (allowance)
2 crackers (allowance)
Garlic
Ginger
Chicken (allowance)
Jalapeño / green chili
Salt & Black Pepper

MethodBlend all the ingredients together, then roll into approx 6 small balls (you can make bigger ones, but psychologically when there is more on your plate you feel fuller) and fry for about 15 minutes using spray n cook.

Enjoy

How is the chicken breast made to roll into a ball? Do you grind it up in a meat grinder, or pound it really flat, or cut it into strips and then mix it with the other ingredients?

I flatten it with a meat tenderiser, then chop it very small. I've read so much on this forum about Jalapenos, and from what I can gather, it's ok in moderation, unless it makes you hungry then cut it out, but I love anything to do with Chilli!!!! I love these chicken meat balls, and then I usually throw them in with the Mediterranean spinach and they soak up the lovely flavours from there too.

Hi Samantha,

You really should check directly with your consultant about the jalapenos. I was really surprised when I was told that smoked paprika woud register as a deviation (it's not hot at all!). I like spicy food too but you learn that this is just a process of feeding your body what it needs to lose weight. You don't want anything to slow your terrific progress - check with your consultant.

Here is a nice idea for chicken:


Chicken with vegetables in the Oven

1 skinless and boneless thin chicken fillet (allowance)

Your favorite vegetables chopped (tomato, onion, etc)

Olive Oil Pam Spray

Fresh garlic to taste



Preheat oven to 400ºF. Spray a little olive oil Pam on a baking sheet.

Place the chicken fillet on the baking sheet and arrange the vegetables around it.

Sprinkle the garlic on the chicken fillet and salt on the vegetables.

Spray just a little olive oil Pam on the chicken and vegetables.

Bake the chicken until done for about 15 minutes.

Enjoy!

Ok I promised some Recipe's so here goes one.

Chicken (allowance)
Cabbage (allowance)
Cauliflower (allowance)
Lime Juice from 1 lime(make sure to count as one fruit for the day)
Onion Flakes
Garlic flakes combine all in wok with 1-1/2 cups of water and let steam for 5-7 minutes

Sooo Yummy! Turkey Burger!!

I found some all breast meat ground turkey at the grocery store and was THRILLED!

To make a yummy Turkey burger, I took my allotted portion of ground turkey breast and mixed it with finely minced vegetables - I used mushrooms, cabbage, zucchini, green pepper, tomato, garlic - but you could use whatever you want. I let it sit for a few hours. Grill your turkey burger and serve between two romaine leaves with your mayo on them.

I loved this meal! It was delicious and I felt satisfied!

Ok everyone Ive promised new recipes and yummy idea's had finally got off my dead duff and gonna post them this one is real simple and taste yummy reminds me kinda of chicken parmessan.



Chicken Breast tenders (allowance)
1\3 Allowance of tomatoes from veggie's
Left over portion for Asparagus
Take tomatoes and but in food processor or blender and add a hint of garlic and lemon pepper & salt and blend together.
Spray baking dish with some Pam and place chicken in and pour tomato mixture on top and put Asparagus on top of that and cover lightly with aluminum foil
Bake at 400 degree's for 25 minute's and Enjoy !!!!!!! :P :P :P :)

Chicken Roulade Base
Chicken (allowance)
Half a tomato
Spinach (Allowance)
Basil (herbs add lots of flavor!)
Garlic

Mince the garlic, and very carefully sautee the spinach, which will reduce down to nothing in no time. Finely shop the tomato and chop up the basil, throw it all in a bowl, and mix it up. Next, take your chicken, butterfly cut it, and then using plastic wrap, carefully pound it out into a roughly square shape. Cover the chicken with the vegetable mixture, and tightly roll it up. Bake at 350 until it's cooked, and then enjoy. Feel free to experiment with spices and see what you like.

Ground Turkey Spaghetti Sauce:
Ground turkey (allowance)
half a tomato
onion
mushrooms
garlic

Chop everything small, put the veggies in the pan first till the mushrooms and onions are nice and brown,
throw in the ground turkey, season with pepper, salt and oregano/italian seasoning.

Spaghetti is my favorite comfort food, and this meal makes me feel totally satisfied, even without any noodles :)

Turkey Curry Lettuce Wraps

Ground or diced turkey breast
1/4 tsp curry power
mayo
salt & pepper
1 packet of sweetener
half an apple (diced)
onion (approx. 15 grams, diced)
Ice burg lettuce

Brown turkey in frying pan and set aside to cool. In a bowl combine mayo, curry powder, salt, pepper, and sweetener. Add cooled turkey, diced apple and diced onions and mix until coated with mayo mixture. Wrap in all into large ice burg lettuce leaves and enjoy!

This is one of the best lunches I've had so far. The spicy curry with the sweet apples was soooooo good! I think the mayo/curry mixture would make a great salad dressing too :o)

I made this tonight and it came out fantastic.

Chicken Kiev

Chicken Breast from Allowance
20g Spinach
10g Onion – finely chopped
Garlic
Salt & Pepper
2 x Crackers, from Allowance
Diet sprite
Vegetable – remaining allowance

Make crumbs from the crackers
Cut chicken breast in half, but not all the way through, and open and press flat.
Lightly poach spinach, I used 20g, remove from water and pat dry
Place spinach on chicken breast, scatter onion over, season with garlic, salt and pepper
Fold close, secure open ends with toothpicks
Moisten chicken in little diet sprite
Roll in cracker crumbs
Place in fridge for 15 min
Preheat oven to 180 degrees Celsius
Lightly spray baking dish with some spray and cook, or the cooking spray you can use
Place chicken on baking dish, lightly spray the chicken
Bake for 30 – 35 minutes, or until cooked through

I served mine with the remaining vegetable allowance.

I'm starting my third week on the diet and had a craving for something Mexican inspired - I love spicy food! So I came up with a way to make taco salad!

Ground Turkey (you could use chicken or beef too)
Garlic
Salt & Pepper
Cumin
Onion
Lettuce
Cucumbers

I cooked the turkey with the seasonings and part of my onion allowance.
Then I took my veggie allowance of the other veggies and poured the turkey over the salad. It was so yummy!!!
