This thread is specifically devoted to recipe's containing EGG Ideas ~ please feel welcome to share all your Egg-Ó-licious IDEAS with us ~ ERF’s UP Everyone:
SPINACH FRITTATA - a new idea for INGER {bighug}
Fresh chopped spinach (most of veg allowance)
Mushroom (small part of allowance)
Red onion (small part of allowance)
1 Egg (allowance)
1 cracker bread- crushed
Salt, pepper + herbs
Method: :dance:
Chop spinach, microwave for 1 minute, squeeze out excess liquid, put both spinach and liquid in a bowl with egg, crushed cracker bread, chopped mushroom and onion. Season with salt and pepper and/or dried herbs (optional)
Mix well. Place in a hot frying pan and with a bit of curry powder to add a bit of zing. (ZING: ... Mrs Peel will like that!) :flirt:
Cook until browned and flip to cook the other side. Serve hot or cold.
As a alternative you can not add the crushed cracker bread and slice the frittata to eat on whole cracker breads.

SANDWICH BAG OMELETE {rofl}
Put a large pot of water on to boil. Pot must be larger than a zip lock sandwich bag.
Put an egg into a small sandwich bag. Add veggies that you like from your veggie allowance to the bag.
I used tomato, onion, baby marrow and green pepper or onion and mushroom. Add any dried herbs and spices that you would like. Seal bag, getting any air out. Lightly crush bag to mix all of the ingredients together.
Squeeze out any remaining air, reseal, and place in pot of bubbling water. Leave bag in the bubbling water for 13 minutes. After 13 minutes you have a light and fluffy omelette with very little mess. It really does work!!
You can be creative with what you put in to it.
You can use this method to amaze your guests next time you have a large family gathering... everyone's omelet will be ready at the same time!!!

EGGS ON “TOAST”: :flirt:
1 Egg
Tomato, onion, mushrooms (allowance)
Rice cake
Herds and seasoning to taste
Method: :eyebrow:
Fry or poach egg. Chop veggies and place onto a rice cake and grill until tender. Sprinkle with herbs and seasoning. :clover:
Serve egg on top of rice cake and ENJOY!!! :flirt:

CRACK ‘N’ EGG PIE: {elmo}
Mushroom, Zucchini, squash, onion (allowance)
1 egg
Spray and cook
Herbs and seasoning to taste
Method:
Chop veggies into cubes and season to taste. Microwave until tender but not soggy. Spray small ovenproof dish or muffin pan with Spray n Cook. Add cooked veggies. Take an egg and crack straight over the veggies (the yolk usually sits on the top and the white runs trough the veggies binding them together) Place in moderate oven for about 20mins or until cooked. You could also make this in the microwave oven. Leave to cool and turn out.

TIP: A batch of 12 can be made in a 12-pan muffin tin and you can freeze them in their own zip-lock bags to take out when in you a hurry.

CURRIED EGG (cold) {tweety}
1 fresh hard boiled egg
1 tsp fat free mayonnaise
1/4 tsp curry powder
2 crackers
Method:{tweety}
Mash egg in a bowl, add curry powder and mayonnaise. Using a fork, mix together. Spread on crackers. Serve with your own salad made from veggie allowance.

CHINESE OMELETTE {taz}
1 Egg
Cabbage, onion, slice of tomato (from allowance)
Method:{taz}
Heat frying pan & spray with oil. Finely shred cabbage and a small amount of onion. Roughly chop slice of tomato. Wisk egg and ½ an egg shell of water together. Place veggies in a pan and lightly stir fry. When cabbage begins to wilt, pour egg over the top and move pan to spread egg thinly. May need to turn or finish under the grill to cook all egg (depends how thick it is and how big your pan is). Serve with a little freshly ground black pepper and crackers if you like...

STUFFED MUSHROOMS :party8:
Large black mushrooms (allowance)
2 teaspoons of crushed garlic
Oregano
Egg (allowance)
Crackers (allowance)
Method: :bighug:
Place mushroom in a cooking bowl. Remove stems from the mushrooms, cut and mix with the garlic. Fill the mushroom with garlic mixture, break the egg on the filled mushroom, sprinkle with oregano herbs and put the mushroom under a grill until egg is stabilized . Serve immediately. :party8:

ZUCCHINI HASH BROWNS {cheerleader}
Zucchini (allowance minus 15 grams)
15g Onion (rest of allowance)
1 egg
2x Cracker bread
Salt, pepper + herbs to taste
Method:
Grate baby marrow and thinly slice onion. Beat egg and add to vegetable mix. Crush cracker breads and add to mix with herbs. Pour into fry pan in small sections and cook both sides.

MINI FRITATTAS :jumping2:
Veggies (from allowance- tomato, asparagus, green pepper and mushrooms)- chopped
1 Egg
Method: :hungry:
Lightly spray a non-stick fry pan and fry vegetables gently until warmed through and tender. Beat the egg in a bowl. Place 2 egg rings in the fry pan and lightly spray with oil to prevent sticking. Divide the veggies between the rings. Pour the egg over the top and allow to brown, then flip over to cook the other side.
Remove egg rings and serve, add salt and pepper to taste.

BRUSCHETTA :party1:
Tomato, green pepper & onion (allowance)
Fresh/ dried Basil, Ground Pepper
1 Egg
2 Crackers
Method::party3:
Pan fry an egg over easy, then pan fry tomato, green pepper, onion and basil. When cooked season and place on two crisp breads. Eat the egg on the side or on the Bruschetta.

Mini Quiche
Veggie allowance any combination of your favorites, finely chopped:
mushroom
green pepper
green onion
tomato
asparagus
1 egg
1 tsp water
2 saltines finely crushed
salt & pepper
seasonings to taste
mix veggies, cracker crumbs, & seasonings, add egg and whisk together. Pour into mini muffin tin, fill each about 1/2 full. Bake at 375 degrees until firm. Makes about 12 pieces, tastes good hot or cold. If you make them ahead of time, they're easy to grab and go, and they hold over well in the fridge.
Sorry if I've duplicated anyone's recipe - I used to make something similar but with non-cohen ingredients, so I've been experimenting. Haven't seen one quite like this on the boards...

Now, I realize that there will be some of you who don't know what Poke Salad is. This is considered a Southern delicacy. Basically, it is a green that grows wild (and mainly in cow pastures, etc.). It gets its name (Pokeweed) because you pick it and poke it into a paper sack to carry home and cook. It is actually a poisonous plant, and you must know how to prepare it correctly to get rid of the poison in order to eat it. But anyway, I love my Mom's poke salad, and this is a Cohen friendly version of it. I have it for breakfast sometimes.
Faux "Poke Salad"
Ingredients:
Frozen spinach (allowance) (this would be the faux "Poke Salad")
1 medium egg
Salt
Pepper
Instructions:
Spray a non-stick pan with Olive Oil or Butter Spray. Place defrosted spinach in the pan and warm slightly. Beat the egg and pour into the pan. Salt and pepper to taste. Cook until the egg is well done. Enjoy!!!

I learned a tip from Rachel Ray about poaching eggs. Pour a little vinegar into the boiling water before putting your egg in and that helps the white to coagulate and not feather everywhere in the water! It does not flavor the egg in any way!

I take my hardboiled egg and dice it up, add some dill, pepper or any other seasoning you like, I've also added some chopped cucumbers to add some crunch. Then I take the mixture and put it in bib lettuce and wrap it up. It makes for a delicious egg salad lettuce wrap.
Don't know if you'll like any of those but it's worth the share....they could become your new favorites.

POACHED EGGS:hungry:
1 Egg
1 Teaspoon Vinegar
Boiled tomato (allowance)
Crackers (allowance)
Method: :hug:
In a frying pan, boil sufficient water to cover the egg remove the frying pan from heat, and add the vinegar to the water. Break the egg into the water and cover with a lid and allow it to stand for +/- 4 minutes (for a soft poached egg) or longer to taste. Serve immediately with pre-boiled tomato (allowance) and crackers from allowance. :hungry:

SCRAMBLED EGGS {taz}
1 x Egg
Salt and pepper to taste
Bit of water
Boiled tomato and/or pre-fried mushrooms (allowance)
Crackers (allowance)
Method: {tweety}
Heat a non- stick frying pan with spray ‘n cook. Beat egg with salt and pepper and a bit of water; pour in to the frying pan. Stir / scramble egg until cooked. Serve immediately with pre-fried or boiled tomatoes and/or mushrooms and crackers.

VEGETABLE OMELLETT
1 x Egg
Mushrooms, Onion and Green Pepper (allowance)
Salt and Pepper to taste
Crackers (allowance)
Method: {bouncing}
Stirfry veggies until cooked.
Heat a non-stick pan, spray with PAM. Add ½ egg shell of water to egg and beat egg with salt and pepper till mixed. Pour egg mixture into frying pan, cover and simmer till cooked. Top with veggy mix and fold over. Sprinkel with herbs.

Balsamic vinegar,

Curry powder
Mixed

Spray a small microwave dish with spray cook. Add chopped vegetables, herbs & spices – microwave 1-2 minutes. Add a bit of water to make the vegetables into a paste – make a small hollow for the. Add egg, replace lid and microwave until egg is done to taste. Serve on / with crackers [COLOR]

Hi All Diet BUDDIES I did the Following it was delicous for breakfast:-
1 Boiled Egg (Hard Or Soft depending on TASTE!)
A little Onion (within Allowance)
Mushrooms (Within Allowance)
Teaspoon Low Fat Mayonaise
Salt and Pepper and spices To Taste!
Cut Egg and Mushrooms into small pieces.Mix everything together to your taste dish Up and eat it is Yummy a change from Omlete and Poached egg or SHAWN's OH NO DISH!!!Ha Ha!

Hi, I'm new to the board and just had to share with you a picture. My two sisters and I have been on 1pd since June. My birthday was in August and one of my sisters created this hard boiled egg birthday cake for me. I thought it was funny :laughing: and wanted to share! She said the first one the egg was still too hot when she added the candle and it melted, so she had to start over.

Hey everyone. I made an omelette for dh and I the other morning and it was very close to the real thing. He had the idea to use two eggs, double veggie allowance and cut it in half. I used water for fluff instead of milk. Whipped it up, used cooking spray. added muchroom and spinach allowance--slightly precooked in a separate pan--and voila. It was a really good omelette. bon appetite!

Hi Everyone
Has anyone tried these Muffins - just made some and are delicious - will be great for breakfast on the run or a quick meal. Make a bulk batch and put in the freezer for when you are in a hurry.
Muffins
Stew 1 Apple in a little Sprite Zero, mush, grate Zucchini (allowance)
Beat 1 egg and add apple and zucchini and 1 cracker crushed (I use Cruskits for this)
Mix together and place even amounts into Muffin tins - I lined with papers. Cook in moderate oven for approx 20 minutes. Remember you have used 1 fruit allowance with this recipe.

Sorry Phyllis - I am a Kiwi and one of those cooks who doesn't always weigh things.
We consider moderate 150-170 centigrade or 350 farenheight (oops spelling) Give them a try - I had them for breakfast this morning and I wasn't hungry until lunch time.

Not sure if anyone else has posted a recipe for this, but I tried again this morning and achieved success.
1 hard boiled egg
1/8 tsp white vinegar
1/8 tsp - 1/4 tsp dried mustard
1 tsp light mayo
1/2 packet of stevia (or splenda)
Mash the egg yolk and mix with other ingredients. Divide mixture and fill egg whites.
If you love deviled eggs, this is a quick breakfast treat!

I really love the zucchini hash browns! Right now I'm loving them with sea salt, fresh ground pepper, and herbs de provence (not quite sure what's in that, but you can buy it as a spice blend at the grocery store). However, I have a question. When you grate the zucchini, it's really watery. Is it ok to squeeze out the water BEFORE you weigh it for your portion? Or do you have to do that after you weigh it?

DEFINITELY squeeze out the water before you weigh it!!!! I buy the smallest diameter zucchini that I can find and they contain far less water than the bigger ones. I really love the zucchini pancakes, too and have them every morning for breakfast!!! YUMMY

Rice Cakes are allowed as a cracker. I get the plain without salt and the brand I get says only brown rice as an ingredient. They weigh about 9 - 10 g. for one.

Hi everyone! I just finished my second day and I have a question...On my program sheet it says I can have cheese (not feta) once a day, but doesn't say "allowance". The reason I ask is my fave breakfast is to spray a mug with cooking spray & add an egg and a wedge of low-fat laughing cow cheese (cut into small pieces) and microwave for a minute, stir, microwave for 40 seconds more. Is this allowed? Thanks so much!

unfortunately, i don't think it's allowed. :( at least in my version i can only choose cheese & veggies OR egg and veggies. i don't think you can combine the egg and cheese.
but, i've only been on this thing for 3 weeks... others might know better.
it DOES sound delish, though!

Welcome to 1PD and to the forum!
Sorry, you can't mix 2 different kinds of protein until you get to Refeed. But I think that you can mix the cheese (with the exeption of Feta). For example, you can mix ricotta with mozzarella, if in your diet says 60g of cheese and 90g vegetables, you can have 30g of ricotta and 30g of mozzarella. But you can't mix Feta with the other cheese.

Your receipe sounds yummy, but you wouldn't be able to add the cheese to your egg would you? Say you are doing egg with veggies like green peppers or mushrooms or zucchini, that might be okay, but the cheese, I don't believe.:party1:

Here is one of our favorite breakfast omelets:drool:, it takes a bit to get a hang of it (no butter and only one egg) and i don't know how to explain the timing...so keep an eye on it and it'll be fine... still it's a nice one to switch up the breakfast from the old hard boiled egg.
Ingredients:
1 egg
3 tps of water
Fresh chopped spinach (most of veg allowance)
Mushroom (small part of allowance, optional)
1/4 teaspoon of fresh minced chives
Several leaves of fresh basil
Salt to taste
Method:
Place egg white and water in (i use a small bullet) small blender whip till frothy-thick.
fold in yolk and pour into hot pan and add all ingredients on top and cover on low heat
When spinach turns bright green, fold in half and finish cooking uncovered on med-high heat.
Throw a sprig of parsley on top and Bon Appétit :party1:
Hmmm, I just was thinking of trying a variation of this in a small Pyrex pan and baking it maybe with cracker crumbs.

Devilled Eggs
4 Eggs
4 tsp mayonnaise
Onions (80g)
Scallions (80g)
Mushrooms (rest of allowance for 4 portions)
Boil the eggs. Peel off the shell, half them lengthwise, scoop out the yolks, and toss them in a bowl. Mash them with a fork. Finely dice the onions and scallions (as finely as you can get them!), and finely chop the mushrooms. Lightly sautee the mushrooms so they're a bit more tender. Mix the vegetables, mayonnaise, and mashed egg yolks until it's a relatively homogeneous mixture. Stuff the egg whites with even portions of the mixture. 2 deviled egg halves is one egg + veg meal, so this makes 4 meals.
